Description

This Lemon Herb Grilled Chicken recipe is not only bursting with flavor but is also great for heart health. With a zesty lemon kick and a blend of fresh herbs, this dish is perfect for a nutritious and delicious meal.


Ingredients

  • Olive Oil – 4 tbsp
  • Lemon Juice- 3 tsp
  • Salt- 3/4 tsp
  • Crushed pepper- 1 tsp
  • Brown Sugar- 1.5 tbsp
  • Dark Soy sauce- 2 tsp
  • Crushed garlic-5 cloves (around 1 tsp)
  • Finely chopped coriander/cilantro leaves -2 tsp
  • Red Chilli Flakes- 1 tsp

Instructions

Step 1: Prepare the Marinade

  • In a small bowl, whisk together olive oil, minced garlic, lemon zest, lemon juice, chopped thyme, rosemary, parsley, salt, and pepper.

Step 2: Marinate the Chicken

  • Place the chicken breasts in a shallow dish or a resealable plastic bag.
  • Pour the marinade over the chicken, ensuring each breast is coated evenly.
  • Marinate in the refrigerator for at least 30 minutes, or preferably overnight for the flavors to meld.

Step 3: Grill the Chicken

  • Preheat your grill to medium-high heat. Remove the chicken from the marinade and discard any excess marinade.
  • Grill the chicken breasts for about 6-7 minutes on each side, or until they are cooked through and no longer pink in the center. The internal temperature should reach 165°F (75°C).
  • Once cooked, remove the chicken from the grill and let it rest for a few minutes before serving.

Step 4: Serve 

  • Slice the grilled chicken breasts and serve hot with your favorite side dishes, such as roasted vegetables or a fresh salad.

Notes

  • For a more intense flavor, you can increase the marinating time up to 24 hours.
  • Make sure your grill is properly preheated to avoid sticking and to get those beautiful grill marks.
  • You can use dried herbs if fresh ones are not available, but the flavor may not be as vibrant.
